After spending the day playing games and snuggling, we had an awesome family dinner followed by the most delicious and creamy ultra low-carb vanilla ice cream I’ve ever had. Recipe to follow, but I want to take this opportunity to share with you how this decadent dessert was sweetened. Allulose is relatively new in the world of natural sweeteners. As a general rule, I try to avoid both artificial and natural sweeteners because when my brain tastes that sweetness, I often experience an increase in food cravings for days to follow. So there’s your warning… I know I’m not the only one!
Allulose is a “rare” natural sugar found most abundantly in raisins, figs and other fruits. It is 60-70% as sweet as sugar, so you might find that you need a little bit more to achieve the same sweetness. Allulose tastes very similar to sugar and has no aftertaste. The coolest thing about allulose? We can’t metabolize it.
It is absorbed by the small intestine, with about 70% of it leaving the body via the urine within 24 hours. The remaining 30% passes through the large intestine and leaves the body within 48 hours. Because allulose isn’t metabolized, it is also not stored as fat and doesn’t increase blood sugar or insulin levels. But wait! There’s more! A 90-person (relatively small) study, doses of 5-15 grams of allulose, approximately 1-3 teaspoons per day for up to 48 weeks, found improvement in fatty liver disease and in the body’s ability to process glucose. Additionally, allulose triggers the release of GLP-1 (think about the super toxic injectable weight loss meds, Semaglutide and Mounjaro). GLP-1 is a hormone that helps to regulate blood sugar, promotes satiety, and slow digestion. As a result, allulose promotes a decreased appetite and weight loss!
Before you get too excited, I experimented on myself for several weeks before I decided to share this info with everyone. I took 15 grams of allulose three times daily with MCT oil specifically to reduce appetite, increase ketones, and promote weight loss. I stayed on a meat heavy ketogenic diet, fasted, and kept my ketones high (which translates to low insulin levels) with the MCT oil. I didn’t lose a pound. Not even one. And I have a few to shed! So it isn’t a magic bullet. Now I am using allulose as the primary sweetener in our home, bypassing stevia, monk fruit and erythritol. It actually tastes a lot better, and the other health benefits aside from weight loss still exist.

What I found most interesting about it was that I couldn’t eat two scoops. It is very filling! We are keeping it in a covered glass bowl in the freezer. It gets really hard but softens on the counter after 15-20 minutes and scoops out exactly like ice cream! Sugar Rx makes several allulose based syrups (chocolate, hazelnut, caramel, etc) that you can drizzle on for a different taste experience. We are also planning to experiment with coffee, sugar free chocolate chips, and nuts to add variety to our ice creams. Let me know how you like it and if you make any tasty variations! |
